1 kg mutton

1 kg onion

50 grams garlic paste

2 red chillies

1 teaspoon garam masala powder

2 tsp cumin black pepper powder

Step 1: Roast hot spices

Place a pan on the gas and heat it on high flame, once the pan gets heated well, reduce the flame to medium. Now add one teaspoon green coriander, one teaspoon cumin, one teaspoon whole black pepper, 1 teaspoon cloves, 6 to 7 green cardamoms, 3 to 4 big cardamoms, one teaspoon shop 1 mace, 10 to 12 makhanas, 7 to 8 hot red chillies, Add all these things and fry well. Keep in mind that you have to fry the spices on low flame only. Be very careful that the spices do not burn even a little.

It will take about 7 to 8 minutes to roast these spices. Now take out these roasted spices in a plate and keep it to cool. Once these spices cool down thoroughly, put them in a mixer jar and grind them coarsely. Homemade garam masala is ready, you can use it in mutton curry as well as other vegetables.

Step 2: Prepare green paste to mix in mutton.

Now put half a cup of green coriander in a mixer jar, along with 10 to 15 garlic cloves, 4 to 5 hot green chillies, 1 inch ginger, and a small piece of dry coconut, add half the amount of water and grind them all finely to make a paste. .

Step 3: Mix spices in mutton (marinate)

Now wash the present mutton thoroughly and take it out in a bowl. Now add one spoon salt, half spoon turmeric powder and prepared green paste over it, and also add 200 grams of whipped curd over it. Mix all these well with the help of hands and now keep this marinated mutton aside.

Step 4: Prepare Mutton Curry

Now add 5 to 6 spoons of oil in a big vessel and heat it. Now add 2 spoons of cumin, 4 green cardamoms, 2 thick cardamoms, 2 inches of cinnamon, 2 bay leaves, 6 to 7 medium sized chopped onions and fry on medium flame till it becomes golden in colour. It will take 7 to 8 minutes to fry the onions. Once the onion is roasted well, add the prepared green paste to it. Fry the paste for 3 to 4 minutes and now add spices to it.

Now add half teaspoon turmeric powder, 2 teaspoons hot red chilli, 2 teaspoons coriander powder, 1 teaspoon garam masala which we had prepared in the beginning. Now add two spoons of cumin powder and mix all the spices. Now add 100 to 150ML water in it. So that the spices do not burn and it gets roasted well.

After adding water, now fry these spices well, in about 7 to 8 minutes the spices will be roasted well. Now add marinated mutton to it and mix it well. Keeping the gas flame on high, cook the mutton for 10 to 12 minutes. Now leave the water for the mutton, then cover it with a plate and pour 2 glasses of water over the plate. Now cook it in the same manner for about 45 minutes or until the mutton is cooked properly.
